I have a question about cake layering. After you layer a cake, specially a rectangular cake or a big cake, how do you get to separate the layers without them breaking and after putting the filling in between layers, how do you get to put them back again without them breaking again? I appreciate all your comments.

very carefully! icon_biggrin.gif
acutally, i use a spatula to lift the edge of the cake and slide a cookie sheet (one of the flat ones, without a lip) underneath. to put it back, i kind of angle the cookie sheet over the other layer and gently slide it off using the spatula.
HTH!

A piece of cardboard the same size as the cake. Slide it between the layers to seperate and gently slide it off to put back together.

I use a large cake board or better still a large flexible thin plastic cutting board. Slide it under the layer you cut to remove it and then after filling carefully (maybe with an extra pair of hands) slide it bake over the filling.

I'm a cake cardboard person, too. glides off nice and smooth. I was amazed how easy it was with cardboard!
