I am still new to this but I just had a customer call and wants a mad hatter wedding cake. She says she doesnt want fondant (because its gross - we talked about other options so I dont think fondant is totally out) but someone told her you could not do a mad hatter cake without fondant. Now I've worked with fondant and it doesnt provide stability. It could rip or tear. If I'm not mistaken the mad hatter cake would need to be stableized with dowels and leveled properly to work, with or without fondant.
So my question is, am I wrong or is it absolutely necessary to use fondant?
I've done both a fondant one and a buttercream one. I will NEVER AGAIN do a BC one because the buttercream in the tall side of the bottom tier sagged and wrinkled and just about fell of the cake. Had no such problems with the fondant one though. Try to do fondant is my advice.
I wonder why the icing would sag. I've never had that problem. I'll have to read and see if I can find out why icing would sag because I think the client is against fondant and I dont want to convince her to choose something she doesnt really want for her wedding cake.
