Hi -
I am making my daughters wedding cake for her Nov. wedding. We are doing 3 different sized rounds in double layer not ot be stacked. Then I want to serve her guests from sheet cakes. Would anyone give me suggestions as to how many I will need and should I do single layer or double layer 12 x 18 sheets. We are expecting 250 guests. We will be serving the wedding party and family tables out of the rounds used for the wedding cake.
Thanks for your advice, I hope this is not to confusing.....LOL

I would suggest doing 2 layer sheet cakes. then every guest has a piece that looks the same and does not feel second rate. the rectangle cake is much easier to serve I wouldn't say the main cake is for family and the other for guest just have 2 people slice a cake and it will go very fast. You could have the sheet a different flavor than the main cake so you can give guests a choice.

I also think a double layer 12x18 would be more appropriate. One double layer 12x18 cake will have 108 servings that are 1"x2"x4".

we are doing a wedding for about 300 and we offered that suggestion to them and they made a good point...

"don't you think that would rude to the guest who don't get a part of the big cake?"

Now that she said that it makes sense keep them all served from the same central idea of the cake verses some can only have the sheet cakes while others have the round highly decorated "wedding" cake

Just thought I would throw that in there

The sheet cake should have the same look as the wedding cake, in number of layers of cake and filling.
Being served plain ol' sheet cake, there will be those who recognize that they are second class citizens. But if all of the cake matches, that is a non-issue.
Also, IMO, making a cake that feeds everyone from the get-go is much less time and trouble than having to make more cakes. Can you work the tiers to get the fulll number of servings from three or four tiers? I mean, as long as you are making it, the cost difference is pretty much negligible.
