if you want to paint on the chocolate molds you made, do you paint with other melted chocolate? Like if you made a white chocolate santa and you wanted to add details.

Yes, paint the details with colored melted chocolate. I paint the details in the mold.

They are pretty hard to paint after they are molded. I always tint some of the chocolate and paint the mold before I pour the chocolate in. They come out perfect this way.
