Pricing Matrix- Adding Techniques?

I has downloaded the pricing matrix from this sight and like the idea of being able to plug in the specifications and it calculate the price. But I was wondering if anyone could offer advice on adding price values to techniques such as brush embroidery, cornelli lace, other size/types of flowers, etc.
Also, what would you charge for a brush embroidered wedding cake? (Wilton's Wedding Dream Cakes, pg.44)
I have come up with the price of $258 +flowers with the matrix. But there is a lot of unaccounted tedious work involved and I was trying to find a way to add this in.
I think you are way under pricing yourself. That cake serves 164 and at $258.00 you are only charging $1.57 per serving. Way to little for a fondant cake with this much detail. The flowers alone will take approximately 12 to 16 hours start to finish to make, color and wire. In addition, you've 80 lace points to make that attach to the top two cake stands. I charge $3.00 a serving for a basic fondant cake. My flower pricing is determined on the type of flower. Orchids, I charge $1.25 per orchid. This website http://www.discountsugarflowers.com/SearchResult.aspx?CategoryID=4 will give you an idea of what might be a good amout for you to charge. Remember, they are wholesale so look to their retail price. (They also have other flowers you can check out.) As for lace points and scolls, I charge $.30 per each one. When I do my lace embroidery, I treat them like a flower I've made and charge by the flower. The easier ones are the cheapest and the more involved are of course more costly. I wouldn't do this cake for any less than $656.00, which is about $4.00 per serving. You are going to be putting in MAJOR time with this cake.
