I'm stumped, all I can think of is adding an egg, using milk instead of water and throwing in some mini-chocolate chips. Sorry I can't really help you.

I use the coconut cake all the time now, since I have had such rave reviews. I simply use the extender recipe from here and it is moist and wonderful. It really does not have a "coconut" flavor but is great! Let me know how yours turns out!

Make it a pina colada cake! Throw in some coconut milk, some rum or rum flavoring, some crushed pineapple. Mmmm.

You could some of the caramel vanilla coffee creamer. I did that for a cake last month, and it was delicious. People who "hate" coconut were asking for seconds.

(It was the DH Coconut Supreme with extra egg, vanilla pudding mix, and powdered creamer. Filling was a mixture of butterscotch and vanilla pudding cups.)
