I am so frustrated icon_cry.gif
My husband bought me this nice kitchen aid stand mixer for my birthday. I wanted to use it especially this week to make MMF.
I am taking Wilton/course #3, so that so off I started to make MMF following the recipe from this website.
I tried my best to follow it but it end up being a disastrous sticky mess.
Probably because I did not place the marshmellows in the microwave until the mixture was hot and LIQUID. Was that the reason???Was it the brand of the marshmellows? It was all sticky with 1 pound of confectionary recipe... what happened?
Please some advice

I am not sure what you mean by this so I'll give you a short version of what I do,

1) Generously grease your large bowl with crisco
2) Add the marshmallows and 2 tablespoons of water & 2 tsps of vanilla
3) Put bowl in the microwave (I put mine in for 3 minutes on high), then stir really well.
4) Grease your kitchenaid bowl really well & put in 4 cups of sifted powdered sugar, when the marshmellows are melted put them into the powdered sugar and mix well (I also like to grease my beaters to avoid them getting so sticky).
5) Measure out another 4 cups of powdered sugar and sift it. Change your beater to the dough hook (grease it too) and then add about 3 cups more of the powdered sugar and mix well. If it looks too wet, slowly add more powdered sugar. I find that I usually only use about 3 cups of the powdered sugar in the 2nd step (total of 7 cups).
6) Take some seran wrap, grease it, then put in your MMF and wrap well and let it sit for about an hour. If you're not going to use it the same day, wrap it really well in a freezer bag also.

Hope that helps some. Let me know if you have any questions.

Though it doesn't take care of all the sticky mess, definatly grease everything with shortening: Mixer bowl and padle, microwave bowl, spatulas, ect. You still get a little mess, but it is water soluable and cleans up pretty easy.

I've tried to make MMF in my Kitchenaid, but found the mess just too much, also. I just do it by hand. It's just as quick, and a lot less mess to clean up.
