ok, so i made 3 cakes tuesday night for saturday night. i frosted them last night, and they have been kept in a cake container. is this ok? will they get yucky before saturday? should i have frozen them instead? sorry for all the questions, im just not sure!
Here's what I usually do...I'll bake ahead of time...up to 2 weeks..and then I'll wrap the cakes with plastic wrap and foil and freeze them, I take them out of the freezer the night before decorating and then (keep them wrapped while thawing) ...frost and decorate....In the past (making my own wedding cake) I crumbcoated the cakes and put them in the freezer and took them out the night before decorating...keep them wrapped while thawing. In my opinion, cakes that have been frozen are more moist than one that goes directly from the pan to decorating. I think your cakes will probably be ok, but I wouldn't leave them out that long in the future. Just my thoughts!!
