I am doing a wedding cake and the bride really wants me to make a cream cheese icing for the cake... the only problem is that she wants me to do a basketweave with it. Does anybody know a recipe for a Crusting Chocolate Cream Cheese Icing that is not going to melt into a puddle? Thanks so much!

If it were me, I would use the Crusting Cream Cheese icing recipe from this site and add about 1 cup of cocoa to it. You might have to add a little more liquid to the recipe to get the consistency you need. I used it the other day for something outside, and it held up fairly well. I would keep the cake in the fridge as long as possible.

This weekend I made the cream cheese icing from Earlene Moore's website. Everyone loved it. It says that you can pipe and make flowers just like regular buttercream. I'm pretty certain there is a chocolate version as well.
