Hi Everyone! I am updating my cake pans and have a few questions. I usually use two cake pans and stack them together. What is the deal with the deep cake pans and how much mix do you put into these. Is is better to use the two pans or one large one. Are the results the same? Does the cake cook through. I like to buy quality cake pans but when I started looking at different options I decided to get your opinion. Thanks for all your help.

I prefer to use 3" pans like they were 2" pans. This way, when my cakes bake, they do not have a "lip" on top. I bake 2 cakes and stack/torte them to make a tier about 4" high.
