Moist Fillings?

Can I ask, for my daughters cake ( it's on Saturday yikes) She wants a moist red cherry filling for the white cake..... Someone suggested a cherry pie filling.... I am wondering if a filling can be too moist? I am also using chocolate ganache... Is there a way I can stop the filling seeping through the sponge?

My daughter wants the following flavours and fillings, do ou think they might be a bit too much?

Bottom layer 8" White cake, with dark chocolate ganache and cherry filling.
Top layer, strawberry cake with white chocolate ganache filling.

Both layers to be covered and decorated with fondant...

WOW! That's a lot of flavor... You can make a "dam" of icing around the layers to prevent seepage. Also, if a filling is too "wet", thickening it with unflavored gelatin works without adding sweetness.

LOL yes it is a lot of flavour isn't it....

My daughter is Autistic and she has chosen the flavours ..... so we are not really worried, but I would like them to be edible.....

Would powdered gelatine be the thing to use?

Yes. Use whatever directions are on the package to get one envelope or at least 1T to bloom, then stir that into the filling. Once it chills a little, you'll see that it doesn't take much - and you can always add more. Powdered gelatin just seems to not affect taste the way that cornstarch, powdered sugar or tapioca would.

I think those flavors sound excellent together, she has great taste! Think about those choc. covered cherries they sell, only, in a cake. And strawberry and white chocolate, very light.

Honestly my only concern ever about ganache with white cake is if the white cake recipe is flavorFUL enough to stand up to the ganache; I've had some great white cakes that, when tried w/leftover choc., you could only taste the chocolate --i.e. the cake was just too light in flavor. To which I say, actually, who cares? (lol I'm a chocoholic).

Let us know how it turns out, yumm..

I am so excited!!!

This is my first layered cake
My first modelled fairy on top
My first multi flavoured cake

And all for my first born.... My goodness where did those first 13 years go... yikes....

I will post the cake when it is finished... but please e kind to me.... I have only done one iced cake before and it was the ghastly scooby in my album!

LOL I guess their will be a lot of cake left over... my daughter isn't big on parties, so a lot of cake to share between 9 people!!!

I never see flaws when I see and know a cake is made with love. icon_smile.gif This is such a beautiful cake and the colors flow together so well. Great job on the fairy and I love how you did the wing's. And it sounds scrumptious! Perfect flavor combo. Again great job! thumbs_up.gif

I think that your cake is beautiful. I would love to hear how the cake tasted. Like everyone else, the combination sounded delicious. You should be very proud of that cake. I really think it is special that all of your children had a hand in making the daisies.
