Does anyone out there know how to do a chocolate fudge icing like the one in the picture? (This image is a cake from Publix). I know how to do a chocolate buttercream but it doesn't have the richness or sheen that the one pictured does. I also know how to pour a chocolate ganache over a cake but this icing looks much firmer and I don't think it was poured on. I also want the chocolate on my strawberries to match the chocolate on the icing. Any suggestions? Thank you so much!!!!
I think you would really like the Sarah Bernhardt chocolate glaze. You can pour it as a glaze or let it set up to the consistency of canned icing and ice with a spatula. It is very rich and shiny. I have used it to ice a cake as well as dip strawberries. If you are doing both you will need to double the recipe and dip the berries while the glaze is cool, but still liquid. I laid them directly on the cake but you could line a cookie sheet with parchment or waxed paper, lay the dipped berries on the paper and refrigerate till set.

Or, here is a cooked fudge icing recipe I have made for years. The only problem with it is making it when it is humid. You may have to cook it a few minutes longer in order for it to set up if the weather is humid or rainy. If you like a really dark fudgy icing I would add an extra square of chocolate, 5 oz. rather than 4 oz.

Hookste...I have EATEN that publix cake. the chocolate frosting is FAB!! I hope someone from publix reads this thread and posts a recipe...my choc bc does not hold water to publix choc frosting ![]()
