Refrigerate Ganache Filling?

If I make a chocolate cake with the whipped chocolate ganache filling, does it need to be refrigerated? How long can it sit out. I need to deliver a cake on Friday, but it is for a festival on Saturday. I am afraid to put it in the refrigerator for fear of sweating.

I don't have too much trouble if I put a whipped ganache filled cake in the fridge. I would suggest you chill it, then take out just before it is needed on Saturday as the heavy cream in a ganache, needless to say, really should be chilled.

While I would not leave the cake out for too many days, I don't think that a ganache filling needs to necessarily be refrigerated. I think leaving the cake out covered in a cool place (not in excessive heat) would be okay for 1-2 days.

Anyone else?

It's been a while, but I'm pretty sure Colette and RLB both say it's safe for a day or two.

Another idea is to add a really good chocolate to IMBC. I would do that if it's going to be super hot or something.
