Are you suppossed to use one pan or two? In my cake decorating class it was said to use one cake mix per pan but how in the world can I do it with the 8" pan and it look good??

Whenever I do an 8" round cake, I use 2 pans per mix. Unless the pan is really deep, the mix would probably go over the sides.

For the two 8" pans I use two cake mixes with the cake extender recipe from this website. I have extra mix but I you can freeze it for later use.

Mmmmm....

When my Wilton instructor make her cakes, she used an 8 x 3, and made cupcakes with the left over batter.

Then instead of stacking two 8 x 2 layers, she torted the 8 x 3.

Good luck icon_biggrin.gif

I use 1 mix for two 8x2 round cake pans. If you use the bake even strips, I believe they raise higher and more even. For the 8" square pans, you will need two mixes.

I use the same pan, and I use 1 mix (plus an extra egg and pudding mix..to doctor it up a bit)...and I dont have any left over batter...I just torte the cake and it makes 2 pretty nice layers.

For a round tin I use 1 mix, for a square pan... I use 1.5 mixes and 1 pan, reduce oven temp and cook for longer.
