1. How much Tylose do I need to add to 1 lb. of gumpaste?
2. Can it be kneaded in or does it have to be added while making the gumpaste?
3. Is there a way to make gumpaste not so brittle when dried?
The recipe I used was Wilton's. I am about to make Nicholas Lodge's gumpaste.

If you already have gumpaste is the Wilton brand your using? That could be your answer right there as to why its crumbling.
Im sure once you try Nicks recipe, you will never go back to Wilton. But always put down a swipe of shortening on your work service and you can knead a little into your gumpaste to make it smoother and more pliable.
But I think you only need a teaspoon of Tylose added to fondant to make it into gumpaste.
Thanks. I wasn't using Wilton's premade gumpaste. I was using gumpaste I made according to the Wilton recipe in their books. It made beautiful roses but they break super easy. (I don't have pics from this recipe posted yet. I'm making them for a cake next weekend.)

Last night I made Nicholas Lodge's gumpaste recipe. So far I love the way it feels (almost like MMF
). It should be ready to use this evening.

Also last night I made gumpaste with CK brand gumpaste mix. It should also be ready tonight.
Surely out of trying all these different recipes I'll come up with one that I like.
I've been working with the Nicholas Lodge gumpaste today that's made with Tylose in it. I've found it a bit harder to roll than Wilton's recipe BUT I dropped one of my roses today on concrete and only one petal broke

I finally got my aunt & uncle's 25th wedding anniversary cake done. The gumpaste roses looked thin & realistic but they don't look that nice in the picture. Now if only I could learn to be better at photography ~ ![]()
