What is a cake extender and why and when would you use it?

a cake extender is one of any number of recipes of extra things to add to a cake mix. It will give you slightly more batter so you can fill the pans more and get a little bit taller cake. They also often make a mix cake taste more like a scratch cake, maybe make it more moist or more dense.

Oh, I wanted to add too ... (and this has been a topic of great discussion recently here!)

I believe that unless the cake mix extender recipe specifically says to add the extra ingredients IN ADDITION to what the back of the box calls for, you do not.

I use the Enhanced Came Formula from the link above and use the cake mix the same you would as any other ingredient, and ignore what the back of the box says completely.

But that's me. I know some people ADD the extender ingredients to what the back of the box calls for.

icon_smile.gifI got the recipe from CC recipes and used with DH Butter Gold cake mix. I love it!! I really like the texture of the cake and also the taste. It says you can use it with any flavor, I am making a chocolate cake this weekend and I am not sure if I should add some extra chocolate to the batter. It seems like you would need to if you are adding more flour and sugar. Hope someone can help me with this question icon_confused.gif

I add a healthy squirt of Hershey's syrup when I use the extender with a chocolate mix. Sorry I don't have an exact measurement though.

i use the extender w/ 1 c flour 1 c sugar 1 c sour cream and i have used it amny times for choc cakes and never added any extra choc and i have had people tell me that it was the best choc cake that they have ever had. Made it like that for my lil girls 8th birthdya in sept and i accually had soe one tell me when i cut the cake that she didnt like choc cake...so after i prodded she tried it and she loved it...
