What technique do you use for scooping cupcake batter? I've heard of people using ice cream scoops, etc.? What's your favorite way?

My favorite way is a cookie scoop. I bought all three sizes from pampered chef. The large one (hols about 3T) is perfect for normal size cupcakes to bake flat on the top. The smallest one is perfect for the mini cupcakes.

I have also heard of people using the ice cream scoops, however there is such a wide range of sizes I would test out what size works best for the cupcake you are trying to achieve.

i use ice cream scoops

#20/yellow handle - if i want domed cupcakes (each scoop is around 1/4c batter)
#24/red handle - if i want flat cupcakes

I use the Pampered Chef scoops, too. The large one is a perfect cupcake! And they are easy to clean - dishwasher safe. I've had mine for more than eight years!

I use 3 different sizes of ice cream scoops for different size cupcake liners. It makes the job easy, not messy at all and the cupcakes come out the same size.

For cupcakes in paper fruit and nut cups, I use scoop size #20 (for 4oz liner), #30 (for 3.25oz liner), #40 (for 2oz liner).

How do you keep the batter from slipping off the outside of the scoop onto your pan, counter, etc.? Do you just scrape it really well on the edge of the bowl?
