Ok, so I bake a cake. I don't want to decorate it for about 4 days. Do I...
1) freeze the cake, thaw, cover with glaze, then decorate
2) cover with glaze, thaw, then decorate
3) cover with glaze, leave out on counter (covered) for 3 days then decorate
4) none of the above

If answering option 4, please give an alternative answer.

I have never worked with glaze and want to, so this must be in the options.

Also, where does torting and filling come into the picture?

If I didn't have so much to do this week, this wouldn't even be an issue because I would wait until the last minute to do it all!!! icon_razz.gif

I'd go with #1.... however, if it is a wrapped really well so that no moisture can escape, you could refrigerate it and then go through the glaze process when you are ready to decorate it.

Sorry, I guess I missed the part about torting and filling...

I like to freeze my cakes (when I actually freeze them) with them already torted and filled, but depending on what you fill the cakes with they may not be an option you want to use!

I would:

bake, cool, cover with simple syrup, wrap in 2 coats of seran wrap, wrap in 2 coats of foil, freeze, thaw on day you want to decorate, torte & fill, ice then decorate. icon_biggrin.gif

I do this a lot since I work full-time outside of the home.
