Nfsc - Rolled Between Parchment Or Just Smaller Balls?

Do you have a preference? I've been rolling them between parchment and then putting them in the refrigerator before baking which works great. However, it does take a good bit of space in the fridge and I'm wondering if it's easier and as effective to just break the dough up into smaller balls and keep them cool until I'm ready to roll.

Also, if you do keep them in a ball until you roll them out, do you put them right into the oven or back in the refrigerator to harden again?

I really like the parchment technique. I just lay the cookie sheet on top of the other stuff I have in the fridge so I don't have to clean out a whole shelf.

Previously, when I chilled in balls, I just rolled and baked, didn't put the cut cookies back in the fridge...

i always roll mine with wax paper and then stick it in the freezer ....works well for me , but i have an advantage in that my hubby got me a deep freezer about a yr ago so i have been able to move everything from my little freezer on the fridge to the deep freezer and just use the little one for layers of cookie dough.

Gotta love the deepfreeze. I use mine all the time!

So do you all use silpats? Also, can you bake with wax paper like parchment paper? Doesn't it get wax on the cookies? I am a little confused. I want to try nfsc, but I havn't had the ambition yet.

i have been told that you can bake with wax paper...i tried it once and it stunk up my whole house and the cookies really didnt come off that good..i NEVER tried it again...personally id just stick to parchment...i dont use the silpats...i have 2 of the rubbermaid flexibale baking mats but i dont like them they tend to curl in the oven.
