Okay, so I have this wedding cake due Saturday...I knew I had seen these cutters at my local cake store here in Phoenix, but when I went to buy them, of course they had none! Does anyone know where I might find these to get them here by Friday? (phoenix would be great of course, but at this point, I am willing to ship the dang things here!)

I don't know of anything in Phoenix, but this wensite has cookie cutters that look like that. It isn't the exact set you have in your picture, but there is a 2.5" and a 3" one.

If you have regular heart cutters in the right sizes, you may be able to cut those out and then just squish the points and bend them a bit to get that shape.
I've used that technique to make starfish cookies with a regular star shape cookie cutter, and it worked well. Fondant might be a bit trickier, but I would think it would still work.
What are you cutting with them?
