3D Cake - What's Best?

Hi,

I'm making my first 3D cake. What type of cake is best for sculpting? Sponge? Madeira cake?

Any advice would be gratefully received!

I usually use white almond sour cream cake...which sound kind of similar to the recipe Denise posted. I just love the taste of it, and the nice fine crumb. It's probably not the easiest cake to carve, but I usually do it frozen and it's worked ok for me.

How is the crumb on the durable cake for 3D cakes?

No matter what type of cake you use, just be sure to fill the cake and freeze it if possible, because it will not crumble and will be easier to carve in general.
