I will NEVER EVER EVER EVER NEVER try to do a stacked cake again. NEVER...Forget this....sheets, rounds, hearts , doodie cakes, Giant manly organs I don't care ANYTHING before another stacked cake...why is it when one thing goes wrong EVERYTHING goes wrong???? Well....it started yesterday with the baking....everything I baked took 10 times longer and came out looking like a dookie nugget! Started filling and icing today...thought it was all going ok..considering the weather and the icing is already giving me HE**...put the top in the fridge to set up, got it out to apply final coat of bc and UGHHH it's LEANING!!!!!! I cried..just cried...I have NO time to rebake at all..OR make any more icing then the 20 POUNDS of it that I already made. I couldn't get my darn corners good, my gp bow looks like it saw my backside UP CLOSE and I had the hardest time with these "hidden pillars" ONLY because I bought a 8 inch seperator plate instead of the 7 I needed!!!!!!!!!! UGGGGHHHHHHHHHH, I am literally gonna cry...I want to just pack it in...throw in the towel.....hit the bed and its only 8:00...I want to jump up and down on the bed like a spoiled rotten brat and pull my hair out.....NOT BAKE OR ICE ANOTHER cursed cake!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! BUT......I promised this cake...* breathing a little easier * so what can I do....but just go on with the icing...and forget about what I see and just keep on truckin...soooooo all you great ccers I hope you have a better night then I.......I PROMISE I won't let my other personality come out again tonight....I'll try not to let her out anyways icon_twisted.gificon_smile.gif

My cake day isn't going the best either. I'm making a stacked cake separated by pillars for tomorrow (having some people over for dinner so I decided why not make a big cake...), so I baked the cakes today and started frosting it. First I forgot that the recipe for chocolate cake from scratch makes more batter than the box mix, so my pans were over flowing while baking. And then they started to fall while cooling for some reason. While frosting, I realized I needed the one chocolate round to be smaller so stupidly I cut it freehand without measuring thumbsdown.gif Bad idea. So now instead of chocolate cake on the bottom level and white on the top, it will have to be chocolate under white cake on both of them! So I gave up and decided to finish it tomorrow. icon_rolleyes.gif

I hate and love making cakes at the same time!

I'm sorry you've both had trying days.. don't give up... just look ahead to better cakes... keep in mind that your trained eye picks up on these details that most customers will never ever notice! Keep going!

Ok...to sum it all up I have had to reice a stacked cake....(deep breath)..12 inch square double icon_eek.gificon_mad.gif (ok I feel my demons coming out...breath) AND the top 7 x 7 3 layer present cake ... icon_sad.gif NOT A HAPPY CAMPER!!! With any luck it will be decorated by morning...but MAYBE NOT...might HIT THE CEILING!!!!!!!!!!!!!!!!! OK Im ok now...umm sorry...made and remade and REMADE THE tapedshut.gif icing.... (HUMIDITY IS KILLING ME)...but I promise....as the good Lord is my witness I will NEVER do a stacked cake as a PAID cake icon_sad.gificon_sad.gif tooooooooo much pressure...Im just not that good yet... icon_cry.gif why did I even think I could!!??!!!?? God bless you great decorators that do this EVERY day..cause I think I'd go postal!!!!!!

Thanks for listening....oh yeah..if I had a stiff drink Jan I WOULD BE DRINKING MYSELF D R U N K!! icon_biggrin.gif

And I am sorry blmiller....maybe we should just ...I dunnooooo...DRINK like Jan said lol....Ok I have five more minutes before my breaks over!! I also dunno if I will ever post this stupid blasted cake...how embarrassing lol.

this must be going around. I'm makin a "pill bottle" 3D cake. IF this thing turns out...it will be a miracle!!! Every single cake I baked for this one, over-flowed into the bottom of my oven. So instead of my home smelling like wonderful fresh baked cake...it smells like charred cigars!

I am just now beginning to stack them, and it's due for a 2pm party tomorrow!! I'm going to be up all night. icon_cry.gif

despite all the drama, your cake turned out lovely!!!

jamhays, I did the same thing when I baked cupcakes for my sons baptism. the first batch I overfilled and it fell onto the elements of the electric oven and OMG... the smell.... YUCK!!

so Dh stuffed his face with the first, lopsided stuck together tray!

I was getting ready to see a pretty bad cake and when i saw it i was very confused. That cake looks great! You cant tell you had problems with it at all. And your bow looks perfect! Dont even stress it anymore. I think it looks wonderful! But sorry you had so many problems with it! usaribbon.gif

I know you had problems with the stacked cake but it turned out absolutely beautiful. You did a wonderful job. Please don't stop doing them. It just takes practice. Your cakes are great and you have talent, you would be cutting yourself short if you stopped doing them. I would love to see the look on the persons face when you deliver it. Total amazement I bet! thumbs_up.gif

Don't worry we've all had our CRAZY CAKE LADY moments. icon_cry.gificon_cry.gif I had burnt condenced milk all over mine before ( we had to strip and repaint- that is whole other issue) We all have had WANKY CAKE weeks too. I need to look up some topics on here about the stacked cake construction...all though when I needed it yesterday my mind went blank on what to ask....it was like I wasn't myself LOL I really wasn't I am not a mean mad person at all and yesterday everybody knew to stay out of mommas way lol...I just need to learn the technique...I think what gets me with the square cakes is the fact of if your icing isn't just the right spreading consistency the corners WONT work at all....and that is what I had a lot of problems with...AND NEVER EVER change your design plan on a whim...stick to your guns on the design you had in mind.... icon_smile.gif Thank you fmcmulle I will keep that in mind...I don't give up easily but this thing beat me up last night

Oh no hunney I put a can of condenced milk to heat on the stove in a double boiler and it exploted and it was spakled onto the ceiling and we have the textured ceiling so there was no way to wipe or clean it off. I live a condo type complex so they do all the work but we had to pay the repair. It was so thick and stuck on the ceilling we tried everything before letting them know what happened. I still can't figure out how but I exploded a can and we end up fixing the ceiling. Oh and it was all over the cabinets, floor lights walls. It was just to funny now that I think of it but not at the time when I was cleaning or paying what we couldn't clean.

For me, the best way to do corners is to apply plenty of icing with an icer tip. I put a little extra at the corners. Then I use a bench scraper to pull the icing from the corner to the center, gently scraping off the excess in little strokes. Otherwise, I take the icing off the corner if I go out towards the corners. By going toward the center from the corners, I get crisp corners.
I hope that made sense.

You know, I think cakes are sometimes like our children. Lots and Lots of time, effort and CRAZY MOMENTS!!! Then when the children are asleep....they are angels and when the cakes are done...they are beautiful and we're already planning our next design!
