A Bride That "doesn't Like Sweet"!!

Ok...need some ideas for some "not so sweet cakes". I have a consultation with a bride and she and her fiance "doesn't like sweet". Are they kidding me!! I told them to give me a list of some of the flavors they were leaning toward and they said a dark chocolate cake, white cake or banana cake. For frostings they wanted something lite and whipped to go with the chocolate and possibly a coconut for the white!! I just wanted to say to them...Duh!! Cake is sweet!! And frosting is sweeter!! Anyone have any ideas for me?? HELP!!!

well, for the "lighter" icing on chocolate I love rich's better cream for that! Yummy, and you dont have to refrigerate it either! ![]()
White cake with a simple coconut filling and a french vanilla butter cream, such as butter cream dream would be good but not too sweet. Any kind of Banana cake is very sweet! It's one of the sweetest tasting to me, but very good with a bitter sweet chocolate whipped ganache to help cut the sweet yet still get the banana flavor through is a good one.
But they need to remember, it is cake!!!!!
Well, not all cake has to be so sweet. First, don't make a cake with things that add sugar to the mix (like when people add those nondairy creamers instead of milk, and so on).
I would suggest a whipped topping. I'm not a fan of Rich's bettercream because I find it coats the interior of my mouth, but that is better than regular buttercream.
A dark chocolate cake is not very sweet. I know that I now have had BAD experiences iwth the Cake Bible, but she has a lovely American Chocolate Torte recipe that people LOVED when I brought it to a party. It was moist and not sweet. It's also not very tall, so you will need to double the recipe (I needed a double recipe for a 9x13 pan and it STILL wasn't to the rim). I've made that cake about 4 times and it's definitely not sweet.
But... banana filling is sweet because bananas are sweet, but if you make a filling, offset it with a bit of lemon juice. No suggestions for coconut, sorry!

What about carrot or apple/cinnomon? I have also made a chocolate sweet potato cake....I know it sounds horrible, but it is actually good (I'll be posting the recipe later today as I have had buried in a box!).
As for frosting I cannot help you there, too me all frosting is sweet!

the american chocolate torte recipe mentioned is an awesome not so sweet chocolate cake, I get a lot of compliments on that one from people who arent "into" the sweet factor.
This is a great cake isn't it? Forgot to mention that I've made it with regular cocoa powder and with the Hershey's dark chocolate Dutch process adn the Dutch chocolate/dark one is by far better... and I'm not a huge fan of chocolate cake and my DH HATES american style cakes, but he liked this one. We paired it with fresh sour cherry topping with a dollop of homemade whipped cream OMG yum!!!
I find White almond sour cream cake not to sweet, and tastes delicious. With fruit filling and whipped cream frosting, its a nice balance.
You can also use either IMBC or SMBC for not-so-sweet option on the icing. On baking911 there is a recipe for scratch cake with box mix qualities that's light on the sweetness too. Also, any filling with a bit of tartness tones down the sweet factor.
If you go with a coconut filling, maybe you can try using unsweetened flaked coconut (you can find it frozen rather than in the baking aisle)
