I am new to this site and new to making cakes. My husband and I would like to make a cake for our soon to be two year old using fondant. Do you need to use a certain type of cake or what is the best homemade should you use? We are doing Mickey Mouse Clubhouse theme. Of course we are buying a regular cake but my husband wants to try to make a mickey mouse. For her first birthday we made a tent for Jojo circus clown. I made a homemade cake from a fondant cake book (will not name) ckae was very very very dry. What can i do? icon_cry.gif

I use a regular butter cake from The Cake Bible, and have never ever had a problem. They taste great and take fondant well. As for the fondant, I use Satin Ice.

The White Almond Sour Cream (WASC) thumbs_up.gif is awsome. Just cut the recipe in half. If you don't like almond, use a different flavor. I use it for everything. It is a sturdy enough cake to handle fondant. Because it has sourcream in it, it is very moist. It is posted here on CC.

(Using a DH white cake mix this makes a tad over 14 cups of batter.)

(You can change the extracts, change the flavor of the cake mix, add white chocolate, use liquor/liqueur or berry/lemon juices, add strawberries or raspberries and more.)

I'd use marshmallow fondant. It tastes great and performs well.
