Hi, I'm new and I already need help
I haven't fooled with royal icing in years. I made some last night, it turned out great, I made the palm leaves for my palm trees and had some icing left over. I stored it in a bowl in the fridge with a damp cloth over it. Can this be used again in 24 hours or so? Is there any way to store and keep and re-use royal icing, or am I going to need to make another whole batch just to attach my leaves to my "pretzel trees" ? Thank you so much for your help ![]()
Here is what Baking 911 says about storing it:
If you are making royal icing to be piped, and have left-overs, make sure you keep it covered, airtight at room temperature, if made with meringue powder OR raw egg whites (the sugar in the recipe acts as a preservative; however, royal icing made with raw eggs whites is non-edible, anyway). If any of the Royal Icing has crusted during storage, it cannot be used.
It will keep for about a week or two. Cover icing with a damp kitchen towel (not a paper towel because it dries too quickly) and then with plastic wrap. Secure with a rubber band and then cover with an airtight covering. Stir thoroughly before using. But, sometimes when it's humid, Royal Icing does not store well at all.
If any of the Royal Icing has crusted (gets a thin crust of hardened sugar) during storage, it cannot be used.

i have kept royal icing for about a week in an airtight container, first i cover with plastic wrap then place a damp cloth or kitchen towel on the top of the wrap then i place the airtight lid ontop, also i have frozen royal icing, when i have leftovers i use an icecube tray and fill each compartment with royal icing then cover with plastic wrap then freeze, then when i need just a little roya licing i pop out one cube of icing and defrost it in a plastic bag and once defrosted i just mix it up a little, then use as i would normally, never had any problems with this for sticking things on cakes..
