How long will a fondont covered cake usually last before serving?
I wouldn't go more then 24 hours at room temperature. But you can always (well covered so not to pick up fridge flavors) refrigerate or freeze for about three days.

I heard it stated that some shops decorate for days......but in all honesty I wouldn't go past five days....
Side note:
The Pentax in my Avatar sat for a month on a shelf so I could gauge what would happen for my upcoming Ivory Soap Cake that was going into an Art Show at Altered Esthetics Gallery a while back and the cake of soap would be just sitting on a pedestal for a month. So naturally I was very worried about it's looks.
Guess what happens when it sits for a month? Nothing! When I dumped the fondant cake into the trash it looked perfect as the day I created it, of course I wouldn't eat it though.
