I'm scheduled to do a cupcake tree for a co-workers wedding in less than a month and wanted to get started on the cupcakes today. I made a batch, Colette Peter's chocolate cake recipe, and did it the way I remember doing it for another wedding I did in September. Granted, the weather is different now, but I took the cupcakes out, they had risen, and then an hour later after they had cooled I checked on them and they had collapsed! The only thing I had done differently this time was put both cupcake trays on the top tier of my oven instead of the bottom. could that be it? could it be old baking soda? am so confused and upset over the wasted cakes. Please advise.

is it possible they weren't quite done cooking?

I had this problem with a scratch cupcake recipe a while back and never figured out what the deal was.
