Royal Icing Flowers, Cant Get Them To Cooperate!

Im having such a tough time getting my RI flower to resemble anything but madding blobs and Im about the toss them across the room lol icon_cry.gif My RI is right, Ive made it enough and know its consistency, but I can seem to make a petunia to save my life. Im using a 103 tip, but when I start in the center of the lily nail and give pressure and pull outward, im just not getting that nice wide petal, but more like a sad blob that looks more like a sad attempt at a leaf. Maybe my RI is infact too stiff? I siitng here, looking at my course 3 book and shaking my head in frustration. Any tips would be appreiciated!

Unfortunately, I can't help you. But know that you are not alone. I have bags of icing left over from my class and can't bear the thought of trying because all my RI flowers melted.

I live in FL and have the same problem. I'm thinking it must be the humidity here--one day my flowers are perfect and a few days later they may appear soft once piped and then take days to dry. I do most everything with buttercream, in part, because I got frustrated struggling with my RI.

if you add some cornstarch to your buttercream icing, then it will dry like royal icing and last just as long.

Don't know about you guys, but here in Austin we're sitting in 84% humidity which makes royal a bear to work with. If it's a blob after piping, there's too much water. Even if you've made it plenty of times before, it might not be quite right. All that sugar sucks the moisture out of the air, so what's good in an airtight bowl will grab just enough of the ambient humidity to screw up your flowers. Try adding a bit more powdered sugar.
