How long can a raspberry filled cake sit out. A bride wants me to make her wedding cake, but i can only set it up the night before. That means it would sit out (in a church) for 24 hours before they cut it. Would it go bad? What do i do???? HELP!!!
Everything I've ever learned about food prep screams that 24 hours is too long to let the raspberry-filled cake sit out, however, I think if it were in an A/C, very cool room, it would probably be OK. I know I would feed it to my family, but taking the chance on a wedding party... I can't wait to see what other more experienced cakers have to say.
If you are using a prefilled sleeve of rasberry filling then those dont need to be refridgerated at all so you will be fine. but if you are making your own fresh check the other ingredients you are using they may not be able to sit out... it depends on what you put in it.. remember that rasberries dont grow in a refriderator... they alone dont need to be refridgerated it the other stuff that does..
I made a raspberry filled cake for a wedding last weekend. While that cake didn't sit out all night the top that I rejected did. (Made a new one because the first one argued with me from the moment I took it out of the oven!) It was WASC cake, a thin layer of buttercream, a thin layer of raspberry preserves and raspberry syrup for the filling and Chocolate IMBC frosting. We ate it all and haven't died yet (it's been a week). Probably shouldn't have left the IMBC out but oh well, builds your immune system right? lol (I wouldn't leave IMBC out again, I just didn't think about it.)
