how long do you find that ur cake lasts before you sell it or serve it??

Well, I never make cakes before I have an order but I've found that they will stay fresh for a pretty long time. You have to take under consideration fillings, fondant or buttercream, scratch or cake mix. I usually do a doctored up cake mix covered in fondant with non-refrigeration filling and they stay fresh for over a week. (I noticed that with my son's birthday cake, baked on Wed. decorated Thurs and Fri, party on Sat... it was a week later and still had a little left over, I swear, it was still good and moist, I only covered them in saran wrap and put them in the refrigerator after it had been cut)
So, I wouldn't bake and decorate a cake a week before a client will pick up but I think my cake passed the test. HTH

I made a cake for a friend of mine, chocolate with BC, covered in MMF. She called me 2 weeks later and was still eating it icon_confused.gif I asked her if it was getting moldy yet, and she said no. I wouldn't eat a cake 2 weeks old.. but this particular one apparently was ok.

Mine last 2 week on average. shhh.gif


I have a food phobia though... If it's there 3 days or more it's tossed.

I dont' make cakes "on spec". I make them to order.

But my daughter's baby shower cake.... I was still eating a piece of it a week later and it was as fresh as the day I baked it.

I make all mine to order as well. And as nefaby said, it depends on the cake recipe. I ate a one-week old quinceanera cake (I didn't make it) once and it made me sick.
