A friend was at Big Lots and bought me 3 5lb. bags of Duncan Hines Bakers Deluxe Cake Mix ($3 each) - white, yellow and devil's food. The bag says to only add water. Has anyone seen or used this mix? I can't find any info on line. I'm a big cake mix doctor-er and not sure how much to doctor these. I'd use my usual milk instead of water, but should I use and extra egg or two? One bag makes 1 large sheet cake or 8 8 inch layers. It has good directions/baking charts for the various sizes. I'm not likely to use a whole bag at once. Any ideas?
I would say it depends on how you usually doctor. I've never used this, but if it was me, and I used milk instead of water, then I'd replace all water with milk. Then also I usually add a package of pudding and an egg. so if this thing makes 8 8" layers, I would had 4 packages of pudding and 4 eggs because a regular box makes 2 8" layers.
does that make sense? I wouldn't add oil or the normal amount of eggs because apparently they've somehow worked that into the mix already.
And if you're not going to use a whole bag at once, I would measure the full bag (or weigh it) and divide by 4 to get the amount of a regular box of cake mix that will make 2 8" layers.
Have you tried this mix yet? How did it work out? Did you doctor it? I'm wondering whether I could use it for a large tiered cake but I'm nervous!
I don't have a kitchen scale so I'm trying to figure out how to convert the lb. measurements to cups. The bag tells how many cups of BATTER to use for each cake, but not how many cups of MIX and water. Help!

It's a just-add-water mix so some of us have been wondering how to doctor it to improve the flavor/texture. Eggs, pudding, etc.
OK, I'm no math whiz by any means so y'all tell me if this makes sense. I want to make 1 8-inch layer (basically half of a standard cake mix.)
So, under ingredients, this bag says it contains 46, 1/3 cup mix servings. So divide 46 by3 and I get 15 1/3 cups mix in the bag, right? So, if this bag makes 8 individual cakes, then divide that by 8 and each cake takes 1.91 cups mix.
Re the water: A full bag requires 5 1/2 cups. Divide that by 8, I get .6875 cups. Convert that to fluid ounces and I get 5.5 fl oz.
Does this make any sense??
