Freezing Cakes & Transporting Cakes

HI everyone,
I have 2 seperate questions and I am hoping you can help
Questions A:
My child's birthday isn't till Nov. In the past , I always make his FONDANTR COVERED cake on the Monday, cover on tuesday, and decorate wed-fri, party on sat.
Now, this doesn't leave me enough time to prepare other party things ie food, games.
This year, I am thinking of making a cake a few weeks in advance.
A1) How long before a parth should I make a cake for 'freezing'? (is it best minimun time? perhaps 1-2 weeks before?)
A2) thawing in fridge, how can I tell it is ready to be covered with fondant?)
A3) when is the best time to use food pen to write on the fondant after covering? when it's hard?
Questions B
It's my mum's birthday (70th!) weekend of next week. I'd love to make her a cake but can't imagine taking a whole cake on the plane with me. Since we live in a different city and i wont be arriving till 2 days before her party, I am thinking (this idea soulds silly) covering a cake board with fondant make fondant figurines to stick on top of it (like a cake-less cake top as you can see in my Lunar Jim sugarcraft)
Well, I am thinking of asking mum to order a plain cake with plain fondant covered cake and all I have to do is to "LIFT" my sugarcraft off the cake board and put it on top of her cake. Does this make sense?
ok. my question is:
B1) should I put parchment/baking paper on top of the cake board and then attempt to cover with ONE layer of thick fondant (for easy slide of later)???? would this work?
B2) the problem is since it slides off, how does one transport this on the plane? (even if i put it in a cake box it will still slide due to movements)
If this is an awkard transportation task, then I will just make the figurines and put them on to of her plain fondant cake of course, this means that I wont be able to decorate the surface........
Perhaps some one of may have even better ideas than these.........

Hi, try to answer some of your questions:
A1/A2: I would just make the cake completely and freeze it, worked fine for me, the only thing is that you have to thaw it really slowly in the fridge, for me the best that worked was putting the cake in a cardboard cakebox (so it takes the humid).
If you want to freeze only the cake I would not keep it longer than 2 weeks in it, in some of my books (Confetti Cakes) they say for butter cake recepies the best to keep it is 5 days.
To thaw it properly before covering is a good idea because otherwise your fondant could get wet of really shiny.
B1/B2
I would not take the fondant already rollled with you (you want to keep it afterwards on the cake? or did I misunderstand things
... language problem....) Maybe just bring the fondant and a rolling stick with you and roll it at your mums house. The idea of ordering a plain covered fondant cake and putting your figurines on it, is a great idea I think!!

Actually, I'd reverse your plan. Games don't go bad, plan those anytime. Food prepared in advance and frozen may fare better than a cake. Choose recipes that you can prep in advance and freeze, like lasagnas and other casseroles, etc. Then they just need to be warmed up before guests arrive and you won't worry about colors bleeding as it thaws, dragging fondant tools to someone else's house to finish work, and all the other things that could go wrong when a cake thaws.
The answer to your freezing question.............you can freeze cake a few weeks in advance.........wrap cooled cake in saran wrap really well, then aluminum foil, place into a large plastic bag, and freeze. To thaw completely, take out of the large bag, but leave the rest of the wrappings on it, so the condensation collects on the outside of that. I freeze all of my cakes, and they are moist and delicious. As far as the fondant.........I can't help you there, I have only played with it a little.

thanks so much for the great advice & tips! Can't risk freezing the cake and then find I ruin it due to not thawing out properly etc. So, great idea to plan other things (gosh, this will test my planning skills to actually do things AHEAD of time. LOL)
