I am making a wedding cake for 85 this weekend and I'm worried about it being enough cake! I'm planning on a 10" 8" and 6" round stacked, probably 3"+ high when filled... Will that be enough?

Thanks!! icon_biggrin.gif

I don't think so. I would make 12-8-6

Not quite. (All my tiers are 4" high, which is standard around here.) According to the Wilton chart a 6/8/10 serves 78, including the top tier. That's for round.

You can find a Wilton serving chart is the back of every one of their wedding books.

Here's the chart from CC that shows the number of servings for different size/shape pans (based on 4" high cakes): http://www.cakecentral.com/article14-Cake-Baking-Cutting--Serving-Guide---2-in-Deep-Pans.html

Thanks for the quick responses! I just found my wilton chart bookmarked on my computer and ya, looks like I"m going to come up a bit short. GAH!! Looks like 12, 8, 6 it is!

Thanks again!

I'd do 6-9-12 for a more symetrical look. JMO YMMV

Thanks again for the responses. My only issue with doing the 'more symetrical' cake is then it bumps it up to 100 servings, and the bride already said that they're having a pile of desserts. AND, I'm only charging $90.00

Hmmmm, maybe I'll just email her and ask her what she'd prefer! Thanks again!

I am also making a 10,8,6, for this weekend and I calculated it out to be about 60 servings. That was out of the wilton servings.

I just advised a bride that the above sizes would cover 60-80 people, so that should be okay?

According to the Wilton chart a 6/9/12 serves 100, using the whole thing. 86 servings without the top tier.

I ALWAYS use the Wilton chart as it makes me more $.

How come rectangle is never on these charts or am I simply missing it?

$90 is very reasonable, and for that price, a 6-8-10 can easily be cut to accommodate her guest list, since she is serving other desserts.

Typically, I always "size up" my cake to make it look the way I want at no extra charge to the customer. I also make sure I tell them that AFTER they order. I say something like " I'm going to need to make you 110 servings to make the cake layers look right, but we've agreed to the 100 servings, so you'll have a little midnight snack on me" They always smile and say thank you.

People like getting something extra for free - a little lagniappe. It doesn't cost more than pennies to ad an inch or two of cake.

$90 is incerdiably cheap. It would have been nearer to $300 from me.

Wow 300? I thought I was giving my client a deal when I decided to charge her a little over 1.00 a slice (Yes that is only 75.00 for the cake. But it is really simple and because shes a friend and I'm still trying to get my name and my produst out there) Aprox. 60 servings would have been 130.00 at my normal rate, I'm working on bringing my prices up but I don't know about 5.00 a serving. I was thinking about 2.75 to 3.00(if a big cake) I know I can't cut my prices for ever But I'd atleast like to get my clientel at a steady rate then They can go up. I already have some clients that don't bat an eye at some of my (what would be high, for this area)prices. I'm just still learning.

Well, pricing is a whole different issue. My prices for wedding cakes start at $4.75 a serving, but that varies so much by area that what I charge probably won't work in Idaho.

I was just trying to communicate that I think it's better to have a symetrical cake and overcake your clients.
