Ive just read the 8pages on this topic. Can someone tell me, these boxes you have been having trouble with, is there printing on the bag with the cake mix in it? several years ago i got a whole case on sale, not at walmart, and everybag had printing on them, they dont usually have that, and the 4 that i tried all failed, DH did send me coupons for them all, but im wondering if this same problem has resurfaced.
tonight i have baked 2 cakes that i will be icing in the morning. they look done, but now i'll be worried until i cut one in half to make sure it really did bake all the way through.
i use the DH mix and i just made 2 cakes this week and from what i can tell they are fine..i used character pans so when i cut the "bump" off i of course "had" to eat that extra cake...and it was fine...i dont know if the problem is regional ...i would wonder if all the people having problems are from the same area...but one thing for sure is , if you are having problems with the CM i would contact them and insist on some type of refund...cause its nt right that you are having to have the problems that you are. i hope that yall can figure this and if i start to notice problems with mine ill let yall know.
I've been using DH almost exclusively, and have had no problems (Knocking on wood). Last night, I embarked on a Cake Misadventure, using a 9X13 with DH white (doctored with french vanilla pudding and extra eggs) and a 9X13 with DH devils food (doctored with devils food putting, extra eggs, and melted butter instead of some of the oil.) In addition, I made one small oval of each, to use the extra batter.
By all rights the devils food shouldn't have come out. To start with, I ran out of oil, and had to do a last minute substitution of melted butter for 1/3 of the oil. Then, because I was distracted, I forgot to put a second cup of water (double recipe). Then, somehow my timer didn't start properly, so I had to guess at two minutes of mixing. It looked too thick, but I put it into the pans anyway, at which point I realized I had about a cup too little batter. (Mental recreation of ingredient adding...argh...I forgot the second cup of water!) Back into the mixer with the batter, add another cup of water, mix for about 30 seconds, wash, dry, and regrease pan. Pour batter into pans. Bake.
Because I was worried about the devils food cake, I HAD to sample the small oval devils food cake last night, and it was very good.
So...people follow the instructions to a letter and it fails. I have major problems with following proper procedure, and it is moist, perfect crumb, and well-risen.
Go figure.
On the other hand, balance got its revenge today, when I couldn't even smooth ice the silly thing without major drama.
