I normally use the 3" pan, should I use 2 x 2" so I'll have a 4 " cake?

There is no 'rule', some use a three inch pan and torte, I prefer to use a 2" pan and fill between the two layers, (sometimes torte into four layers) resulting in a cake that is approximately 4" tall. (Maybe a little over or under depending) I like my cakes nice and tall and get many compliments on how tall they are. People in general have seemed to think that makes them look more elegant.

I prefer my cakes to be about 4" tall. I use 3" pans but bake 2 cakes and torte each cake.

4" really is pretty standard. Caterers normally serve the cake slice on a 5 or 6 inch bread and butter plate. That a standard plate size. If you make your cake any taller its harder for the caterer to get it on the plate. Any shorter and it looks small on the plate.
