I am doing a child's birthday cake in September for a little girl with many food allergies the biggest one is to dairy. She can not eat anything that contains any form of dairy or dairy by products including butter or margarine (due to the whey). The cake isn't a problem where I'm running into a glitch is in the frosting. I can't do a normal butter cream, for obvious reasons, and didn't know if anyone might have a recipe for a whipped frosting that did not contain any cream?

i've used the Whipped Cream Buttercream for a child with a milk allergy. it's a light icing, but it doesn't crust. i've doubled the powdered sugar before to make it crust, but can't remember if it still had a light texture.

I had to do a wedding cake for a girl that could not have an milk products and they informed me that the unsalted Fleischman's margarine could be used in place of butter in the buttercream. I used it and it worked out very well. It isn't real soft like normal margarine.
This family was very strict about the dairy because the bride is the type that would have to go to the hospital if she got any milk products at all. They read the ingredients intently.
good luck

My favorite Whipped Icing is "Rich's Bettercream" from Allen's dairy. It is "Non Dairy" so I'd assume it's safe, maybe somebody knows for sure? I buy it in bulk from my local grocery store bakery!

Rich's Bettercreme contains sodium caseinate (a milk derivative).

I also like the Whipped Cream B/C. icon_smile.gif

why not make 7 minute frosting. It is basically marshmallow fluff.
