I am going to start baking (for the first time) 2 10" round cakes this afternoon and I need to know...I am going to use the nail in both cakes and use the bake even strips..should I still lower my oven temp to 325 and bake for a longer time or do I really need to do that? And also do I fill the pans 3/4 of a way full to insure a higher cake and maybe put a collar in the pan??? Please help TIA

I don't use the nail for 10" pans (12" yes) but do use the bake even strips, fill just about 1/2 way (maybe just a tad over - I think 3/4 is too much), and you'll be fine! Good luck!

Do I still need to lower the oven to 325? And about how long should they bake?

I use a flower nail on 10" cakes, I don't lower the temp. and I've never had a problem.

I always fill my pans 3/4 of the way full.

How tall of a cake do you want?

You can torte the layers and make it taller.

I don't use the nail for a 10" cake, and have never had a problem. I always bake my cakes at a lower temp, just over 300 degrees, as they rise move evenly. As far as how much batter to use..I never fill more than half way.

I had trouble transferring my cake when I used the flower nail the cake was only 2 in tall and the cake didn't rise above the nail transferring to the cake board caused it to crack in the middle. I think that with the 10" you'll be fine without.

Thanks guys for the advice!!! icon_smile.gif It sure is appreciated. Just baked 4 10" layers put nails in two of them just to see what would happen. I filled each pan a little over 1/2. The two with nails cracked but the nail was showing, and they were even....the two with out did not crack and rose higher, but had a hump. But thank God for the bake even strips! I love them. None of them are bad cakes because I will be cutting the ones with cracks out. Did notice though did take longer to cook the ones without nails. Just everybody has their preference I guess. But anyways thanks a million!
