Painting Chocolate Into A Mold....what Do I Use?
Decorating By butterflyjuju Updated 16 Oct 2006 , 5:38am by butterflyjuju
I've never been one to make candies and such but it's been requested for me to do cake balls into a chocolate candy mold I have. What do I use to paint the chocolate into the mold? And how can I ensure that the mold will release it when dry?
What type of mold are you using? You can either pour a small amount into each mold and tip and turn to coat, making sure to let the excess drip off or you can just use a clean small paint brush. Depening on the mold, you may need to temper the chocolate. Chocolate can be such a hard customer!
I've been working with it myself for the last four hours!
hello butterflyjuju
Are you using the plastic 'truffle' chocolate mold?
If so... place a small amount of melted chocolate in each cavity (approx 1/4 of the way up); with a small brush (or espresso spoon, or even a tooth pick) drag the chocolate up the sides to the top edge of the mold.
Place the mold in the freezer for a few mins; before the chocolate hardens completely, check to see if the sides are completely covered. if not, swirl more chocolate around, or again drag it with your brush.
Once this shell has harden remove from the freezer. (NB Check often, as it will not take long to harden & because it is thin, if you leave it too long it will crack. )
Shape your cake balls into the shape of the mold cavity, making them a bit smaller than the mold cavity;
Place one in each cavity & delicately push down. Make sure there is a small space between the top of the cake balls and the edge of the mold. Spoon a bit of chocolate over the top of each ball. Tap the mold lightly to ensure that the chocolate fills all gaps and is level at the top. Remember, this top will be the bottom of your treats & will need to be flat so it can stand.
Place the mold back in the freezer. To check if the chocolate is ready... remove the mold from the freezer. DO NOT turn it over yet. Lift it up so you can see it from below. If the surface no longer looks kind of shiny, it is ready. (as chocolate cools, it shrinks. when this happens it pulls away from the mold slightly).
If it is not ready, put it back in the freeze & check again in a couple of minutes.
if it is ready, place a small tray over the top and flip the mold over onto the tray. Holding both the mold and the tray, tap them gently onto a table. Your bonbons should release easily.
Hope this all make sense to you. If you have any questions please feel free to PM me. Good Luck.
(p.s... sorry for the long reply)
Ciao
Thanks for the replies. Sorry I haven't been on to answer. I'll be doing these at the end of the month so I wanted to make sure I had what I needed.
