I am making rolled cookies for the fist time EVER and I have a few questions. The recipe I'm using (Peggy Porschen's sugar cookie recipe from Romantic Cakes") says to refrigerate the dough for at least one hour. I did that. After I took the dough out of the fridge and tried to knead it, I really couldn't because it was very crumbly. I tried to roll it and that worked a bit better but chunks of dough would separate from the main bit.
Eventually it bacame soft and I was able to knead it. I pressed down with the cookie cutter (first time using a cookie cutter too) the shaped dough would stick to the cutter. I lighten the pressure and that fixed that problem. I went around the rolled dough with the cookie cutter and then slowly removed the dough from around the shapes. As the recipe said, I used a spatula/palette knife to place the cookies on the cookie sheet. Every time I tried to run the blade under the dough to lift it up the dough would become mishapen because of the pressure of the blade. Maybe the dough was too soft or maybe I just did something wrong.
Is that how it's supposed to go? Any tips or tricks to make things easier and not lose the shape of the cookie? Any tips at all?? TIA

Not sure why your dough would crumble as I'm sure you followed the directions to a 'T' - so can't help you there (sounds like it needed to warm up).
For the cutter, you can dip in flour to prevent sticking.
I'm sure everyone has their techniques, but I ALWAYS run a long spatula under my dough after rolling out (even when I use a silpat) to ensure the dough is not sticking. Then I cut out my cookies and transfer to a baking sheet. as you mention your dough may have been too soft...
Another option for you would be to rollout between parchment paper, cut out your shapes and place the parchment paper with the cutouts on the cookie pan to bake. This way you don't need to move your cutouts.

I roll out my dough, cut the shapes, remove as much of the excess that I can and then I put it in the freezer while I roll out the next set. Once it is fairly firm I pop them out of the freezer and they peal right off of the parchment paper. Helps a lot as I can handle it a little easier without worrying about the shape getting messed up.
