How do I get buttercream icing smooth on the top and sides of cake? I have tried so many times and i never get it- any suggestions will be appreciated.

These are the three things I do. Well, the first is that you MUST use a crusting buttercream to follow the rest. (not Meringue types of buttercream).
Second, I do my "first smoothing with using a turntable and a HOT large spatula, when it starts to stick/skip, I go rinse it in hot water again (shaking off excess water) and start again.
Second, I use the Melvira Roller method - which is the BOMB in smoothing icing. It gets out what the hot spatula could not. You just have to wait until the cake starts to crust. Sometimes I also use the viva paper towel method WITH the melvira method.

I have my own recipe for buttercream-this is how I get mine smooth:
1. Ice the cake using cake icer tip (#789), smooth the frosting using a small offset spatula.
2. Smooth out the sides of the cake using a spackler until it it fairly even all around
3. Use a large offset spatula to sweep across the top to even out the edges-beginning at the sides and pulling toward the middle.
4. Let frosting crust over, 10-15 mins.
5. Take a viva towel and place on the 'rough' spots and smooth with my fingers or with the spackler again.
I use this method all the time and I love it!
