Help! My Buttercream Is Not Crusting!

i made julie's less sweet buttercream...i love the taste but it's not crusting...the recipe says that it's a crusting buttercream...the iced cake has been inside the refrigerator for almost an hour but the buttercream is still soft...can't smoothen it with viva towel...it's still sticking in my finger... icon_sad.gif

Is it humid there? If it is, you may need a dehumidifier in your kitchen. Cutting back on your fat will help crusting as well (or add more powdered sugar). Also, I leave my cakes sitting out of the fridge to crust. I'm not for sure if an iced cake will crust in the fridge, especially since I stick them in the fridge prior to putting fondant on to help the fondant stick to the buttercream

I know that humidity will make my bc not crust, so I would guess that could be the problem.

Dont know about that particular recipe, but I have one that is wonderful. I use it on all of my cakes. It's not too sweet and it crusts over very well and is easy to smooth with the Viva paper towels. I live in NC and it is VERY hot and humid here and this recipe holds up pretty well as long as it is inside. The only issue that I have with it is that the crisco sometimes "leaks" onto the board, but other than that it's great! Let me know if you are interested in it and I'll share my recipe.

Take it out of the frig. A crusting buttercream will not crust properly in the frig. It may take a couple of hours for it to come to room temp and then crust - especially in high humidity.

my bad...i thought since it's made with shortening and butter it will harden when i put it in the fridge.

Well, yes, it will HARDEN, but it won't CRUST. icon_smile.gif
