I made this royal icing about 2 1/2 weeks ago with the intention of making some flowers ahead of time for a fall theme cake I'm doing in November. Things got really busy and I sort of neglected that project. I know the flowers themselves will last for a long time, but how long is the icing good for? I read somewhere it's 2 weeks, but I sealed it in airtight containers and it still looks and smells fine... can I use it? And for how much longer? I don't want to poison anyone (although I'm not really sure that's possible considering the ingredients)!! icon_surprised.gif

If the consistency seems fine, then I would say that it is fine. Sometimes mine will kind of dry out (even sealed) then I get rid of it. I am sure it is still fine.

the icing will be fine to use and make flowers with. the only thing i.ve noticed about using old icing is that the flowers wont dry as crisp as using fresh RI. which isn't a bad thing.
