I do not have any silpats. Can I still make these cookies without freezing them or do they not turn out. Anyone out there do it differently?


Could use some advice!

You can use parchment paper to replace the silpat. I always do it like that. You can roll the dough out between two sheets and then chill it on parchment too.

I have done it this way before. I had extra dough left and put the ball in a bag and put it in the freezer. When I wanted it I took it out and let it sit in the fridge overnight and used it the next day with no problems. I don't use parchment or slipmats.

You don't have to freeze them just try and refridgerate them for a little while to help hold their shape. You make the dough then roll out and cut shapes then put on cookie sheets and put in the fridge to chill then place in the preheated oven.
