how old is the one you have ? I keep mine for two years or more and keep using it until it's gone.

It is a dry powder, that should not a be a problem. icon_smile.gif

Meringue Powder

Meringue powder is basically dried egg whites with the addition of sugar and gum. Meringue is created when the powder is added to water and is then whipped. Like all other uncooked egg products, meringue powder is pasteurized so it is very useful when preparing dishes requiring uncooked meringues. It also has a long shelf life (over one year)

You know what else I found out because of your post?? It's supposed to be refrigerated after opening! I never realized that before!! Oops I never refrigerated mine.

You don't have to refrigerate the Wilton Meringue Powder. Can says right on it-No refrigeration required.
