I make fruit syrups by cooking frozen berries with powder sugar in a sauce pot. Maybe if you did this and let it cool and then folded into some whipped cream or buttercream you may get what you want?

Rasberry mousse filling

Serves/Yields: filling for 2 9x13 cakes or one thick layer
Prep. Time: 5 mins.
Cook Time: none
Category: Fillings
Difficulty: Easy

1 8oz. brick cream cheese,softened
1 15oz. jar Polander seedless rasberry
1 8 oz. tub cool whip (I use cool whip lite)

Put cream chesse in mixer whip on med for 2 minutes. Add rasberry mix until combined. Add cool whip until combined. Put mixture in refrigerator for 30 min to set.

I knew I had a recipe for this from here at CC...it was under rasberry...no P after the S. Hope that helps..and yes...it's AWESOMELY YUMMMMY!!

Baking 911 has a great recipe for raspberry mousse, I don't know if you would think it's easy or not though...I have made it a bunch so it's easy to me!

So far, I have used this in a lemon cake, chocolate cake, white cake, and a french vanilla cake. So far, they have all been incredible. Trust me and my big ol' butt on that!! icon_smile.gif)
