i have filled and crumb-coated my cake but i can't cover it in fondant until tomorrow, would you all recommend keeping it in the fridge overnight? or would i be better off leaving it out on the counter for the night?

i have it in the fridge right now but i'm worried it may dry it out without the fondant protecting it. any advice?

TIA

I'd be worried too. Maybe just overnight wouldn't hurt. IDK. I don't normally refrigerate my cakes. It would depend on the filling mostly.

When I know I can't get to cover my cake right away, I always crumb coat, then go ahead and put another coat of icing on it. Unless you have a filling that needs to be refrigrated, you can leave it out without any problems. If the filling as eggs in it, then of course you would need to refrigerate the cake, I would wrap in enough to keep any odors out of it.

I think you can go either way - if the filling will be fine you can leave it out. Mist the buttercream VERY lightly with water if it is a crusting kind, before you put the fondant so it will stick better, or do one more light coat of buttercream in the morning before you fondant.
