Hi all! I just made a batch of buttercream that I will need for a cake for Saturday but will be decorating it tomorrow night. The recipe I used was:
2 cups shortening
1 teaspoon vanilla extract
1 teaspoon lemon extract
2 lbs powdered sugar
and I just kept splashing "cinnamon vanilla cream" coffee mate until it was soft enough for me to be able to spread easy with.
Since I used the coffee mate should I put this in the fridge until tomorrow night or will it be ok in a covered bowl on the counter?

I never made buttercream with coffee mate. Buttercream without the coffee mate would be good. Perhaps someone out here knows the answer...bump!!

Buttercream made with milk is OK to stay at room temp for a few days (the sugar acts as a preservative). I'm guessing Coffee Mate would go by the same rules...
I checked and the container does say to keep in the fridge, so I will put the buttercream in the fridge just to be on the safe side.
When I was making the icing instead of using water or milk I used the coffee mate instead and it is pretty good, it has a hint of the cinnamon. Tomorrow when I bake the cake I think I will replace some of the water with the coffee mate also but not all the water as I dont want to go overboard and have to much of a cinnamon taste.
This is the first time I have used coffee mate in anything and so far it is pretty good.
