Paint Brush Technique?

I'm not sure what it's called, but I have seen cakes where people have drawn flowers on fondant, then brushed the icing with a paint brush. Can this be done on buttercream or other icings? I am making a cake with chocolate icing for my sister and would like to try this technique. If I froze the iced cake would that work better?
