I don't know why (I think that I had a moment of temporary insanity) but I have agreed to organize the food for our church's retreat in September. Every other year most of the church go away to a campground and so this year I thought that it would be fun to organize the food for the weekend for approx. 125 people. I'm now at the 'Oh my goodness...what have I done?' stage. My husband and I both love to cook which is a start but does anyone have any ideas on what we can put together? I'm not responsible to actually cook everything, just organize what we will be having and then have other people help with the prep/cooking/clean up. Any help would be MUCH appreciated. I need a friday evening snack, sat breakfast, lunch supper & evening snack, sunday breakfast and lunch.

Yes there is a kitchen and I believe a bbq. There are also 2 fridges and a freezer. I'm trying to come up with ideas that would be able to be pre-cooked or quite simple/easy to actually cook. The budget.....I've asked several times and been told there isn't really one but not to go too crazy. I'm guessing that we are aiming for between $40 -$50 max per person for the weekend.
The last retreat they had a spaghetti dinner on the saturday and the retreat before that they had lasagne. I was thinking that a pig roast might be fun for the saturday dinner...not sure though.

You could do a Mexican night. Make your own tacos, taco salads, burritos, nachos, refried beans, rice... mariachi music in the back ground. A pig roast sounds great. You could make the make ahead breakfast casserole the night before and then just put it in the oven in the morning. Serve it with fresh fruit and pastry. Lunch could be sloppy joe's (which could be made ahead) or burgers and hot dogs, chips baked beans... If it's not to hot you could do a soup and salad bar for lunch. I will keep thinking. HTH
Fri PM snack: Brownies, cookies, and a fruit tray
Sat. AM: Assorted bagels with c. cheese, assorted jams and butters, assorted muffins and whole fruit
Sat. Lunch: Deli Platters, chicken and tuna salads, pasta salad, potato salad, and cole slaw, pound cake, strawberries, and whipped cream to make their own shortcakes
Sat. PM: Blow it out w/ the pig roast since you've saved time with the other stuff Maybe a sundae bar too?
Sun AM: Belgian waffles and bacon. You could have a waffle station and add custom fillings or get frozen belgian waffles and throw them in the confection oven after you cook the bacon. They take like 4 minutes and are not bad. Possibly muffins and bagels, too, for vegetarians and people who don't eat big breakfasts
Sun lunch: baked ziti, sausage and peppers, caesar salad and tiramisu for dessert
Most of that can be made ahead, or partially made ahead and finished off there. Just don't forget the layout bacon in the oven! I burn my first tray every time! LOL.
