I have a sheet cake(baby shower) that the top is going to be covered with Bakels pettinence(sp) and the bottom part is buttercream( the dream one). i just have regular strawberry butter cream in the layers... Now this cake is due Saturday and I have another huge cake to decorate tommorow that is due Sunday. So I was hoping to decorate the baby shower cake today. However, I know that pettinence cannot go in the fridge so I was wondering is it ok for me to decorate the whole thing today and have it sit out for two days even though buttercream in on the bottom? Or am I just going to have to put bakels on at last minute... which scares me because I have decorations on the bottom and don't want to mess them up when I put top pettinence on......

this may see like a lot of questions but I am so confused on what to do...

If it were all regular buttercream, I'd say it would be fine left out. Fondant does a really good job of sealing a cake and keeping it fresh. The real question is what is in your strawberry buttercream? Is it fresh strawberries mixed in or is it strawberry flavor? If it's real strawberries, while it probably doesn't need to be refridgerated, I'd worry about the berries starting to seep and making things runny. Any time you mix berries with sugar the juice really starts flowing. That would be my biggest concern. Do you have a cooler that you could put it in with some ice packs? It would be cooler, but not as cold or muhid as a refridgerater?

it is just regular strawberry buttercream.... no real strawberries in it.. so it is safe to leave out even though the bottom part is not covered with fondant just the top? for two days?

I covered my guitar cake with bakels pettinice and it was left out for like 3 days and was fine!! It all depends on what is in your bc!
